How To Make Campbell’s Creamy Cauliflower Soup

A velvety smooth soup with delicate cauliflower flavor and a hint of nutmeg.

Ingredients

  • 1 tbsp butter
  • 1 onion, chopped
  • 1 head of cauliflower, cut into florets
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 tsp nutmeg
  • Salt and pepper, to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add chopped onion and cook until softened.
  2. Add cauliflower florets and chicken broth. Bring to a boil and then reduce heat to simmer and cook until cauliflower is tender.
  3. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  4. Return the puree to the pot and stir in heavy cream and nutmeg. Season with salt and pepper to taste.
  5. Cook on low heat for another 5 minutes or until heated through.
