- 1 pound chicken breasts, boneless and skinless, diced
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans white beans, drained and rinsed
- 1 can diced green chilies
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions

In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned. Remove the chicken from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Cook until softened and fragrant.

Add the cooked chicken back to the pot, along with the white beans, diced green chilies, chicken broth, cumin, dried oregano, and chili powder. Stir well to combine.
