- 1 pound chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 4 cups low-sodium chicken broth
- 2 cans (15 ounces each) hominy, drained and rinsed
- 1 can (4 ounces) diced green chiles
- 1 cup chopped fresh cilantro
- Salt and pepper to taste
- Optional toppings: avocado, lime wedges, sliced radishes, chopped cilantro

In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, and cook until they become translucent.
