Ingredients

  • 1 pound pork shoulder, cubed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • 4 cups chicken broth
  • 2 cups water
  • 2 cans (15 ounces each) hominy, drained
  • Salt and pepper to taste
  • Toppings: diced avocado, chopped cilantro, lime wedges

Instructions

  1. In a large pot, heat some oil over medium heat. Add the pork and cook until browned on all sides.

  2. Add the diced onion and minced garlic to the pot and cook until softened.

  3. Stir in the cumin, chili powder, and oregano and cook for an additional minute.

  4. Pour in the chicken broth and water. Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, until the pork is tender.

  5. Add the drained hominy to the pot and simmer for another 15 minutes.

  6. Season with salt and pepper to taste.

  7. Serve hot with diced avocado, chopped cilantro, and lime wedges on top.
