Ingredients

  • 1.5 lbs pork shoulder, cut into chunks
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 2 cans (15 oz each) hominy, drained and rinsed
  • 4 cups chicken broth
  • 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Optional toppings: shredded cabbage, diced avocado, sliced radishes, chopped cilantro, lime wedges

Instructions

  1. In a large pot or Dutch oven, heat some oil over medium heat. Add the onion and garlic, and cook until softened.

  2. Add the pork shoulder to the pot and cook until browned on all sides.

  3. Stir in the dried oregano, ground cumin, and chili powder. Season with salt and pepper.

  4. Pour in the chicken broth and bring the mixture to a simmer. Cover and cook on low heat for 2.5 hours, or until the pork is tender.

  5. Remove the pork pieces from the pot and shred them using two forks.

  6. Return the shredded pork to the pot and add the rinsed hominy. Cook for an additional 30 minutes, until the flavors meld together.

  7. Serve the Traditional Pork Posole hot, topped with your choice of shredded cabbage, diced avocado, sliced radishes, chopped cilantro, and a squeeze of lime juice.
