  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro

Instructions

  1. In a large pot, brown the ground beef over medium heat. Drain the excess fat.

  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until the vegetables are softened.

  3. Stir in the diced tomatoes, kidney beans, beef broth, chili powder, cumin, paprika, salt, and pepper.

  4. Bring the mixture to a boil, then reduce the heat and simmer for 45 minutes to 1 hour, until the flavors are well blended.

  5. Serve hot with your choice of toppings.
