Ingredients

  • 4 celery stalks, chopped
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup Stilton cheese, crumbled
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the celery, onion, and garlic. Cook until softened, about 5 minutes.

  2. Add the vegetable broth to the pot and bring to a boil. Reduce heat and let simmer for 15 minutes.

  3. Using an immersion blender or a regular blender, puree the soup until smooth. Return to the pot.

  4. Stir in the Stilton cheese and heavy cream. Season with salt and pepper.

  5. Heat the soup over low heat until the cheese has melted and the soup is heated through, about 5 minutes.

  6. Serve hot and garnish with some extra Stilton cheese if desired.
