- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 4 cups chicken or vegetable broth
- 2 cups leftover roasted turkey, shredded
- 1 cup cooked ham, diced
- 1 cup cooked vegetables (such as peas, corn, or green beans)
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.
