Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/4 cup chopped pecans
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or your fingertips until it resembles coarse crumbs.

  3. In a separate bowl, whisk together the milk and vanilla extract. Gradually pour the milk mixture into the dry ingredients, stirring until just combined.

  4. Gently fold in the cranberries and pecans.

  5. Place the dough onto a lightly floured surface and shape it into a 1-inch thick circle. Use a round cookie cutter or a drinking glass to cut out scones, placing them onto the prepared baking sheet.

  6. Sprinkle the coarse sugar on top of the scones.

  7. Bake for 12-15 minutes or until the scones are golden brown.

  8. Remove from the oven and let cool on a wire rack before serving.
