How To Make Mexican Black Bean Soup Recipe

Ingredients
- 2 cans black beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and diced
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- 4 cups vegetable broth
- 1 lime, juiced
- Salt and pepper, to taste
- Optional toppings: avocado, cilantro, sour cream
Instructions

In a large pot, sauté onions, garlic, and peppers until softened.

Add spices and stir for 1-2 minutes until fragrant.

Add black beans and vegetable broth and bring to a boil.

Reduce heat and let simmer for 20 minutes.

Use an immersion blender or transfer to a blender and blend until smooth.
