Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and diced
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 4 cups vegetable broth
  • 1 lime, juiced
  • Salt and pepper, to taste
  • Optional toppings: avocado, cilantro, sour cream

Instructions

  1. In a large pot, sauté onions, garlic, and peppers until softened.

  2. Add spices and stir for 1-2 minutes until fragrant.

  3. Add black beans and vegetable broth and bring to a boil.

  4. Reduce heat and let simmer for 20 minutes.

  5. Use an immersion blender or transfer to a blender and blend until smooth.

  6. Add lime juice, salt, and pepper to taste.

  7. Serve hot with optional toppings.
