How To Make Serrano Pepper and Black Bean Soup Recipe
A spicy, hearty soup made with black beans and serrano peppers.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 serrano pepper, diced
- 1 tsp cumin
- 1 tsp smoked paprika
- 2 cans black beans, drained and rinsed
- 4 cups vegetable broth
- 1 lime, juiced
- Salt and black pepper, to taste
- Fresh cilantro, chopped for garnish
Instructions

Heat olive oil in a pot over medium-high heat.

Add chopped onion and sauté for 5 minutes until translucent.

Add minced garlic and diced serrano pepper, cook for another 5 minutes.

Stir in cumin and smoked paprika.

Add black beans and vegetable broth.

Bring to boil and simmer for 15-20 minutes, until beans are tender.

Remove from heat and blend the soup using a blender or immersion blender.

Return soup to pot and stir in lime juice, salt and black pepper.

Garnish with fresh cilantro and serve hot.
