How To Make Serrano Pepper and Black Bean Soup Recipe

A spicy, hearty soup made with black beans and serrano peppers.

Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 serrano pepper, diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 cans black beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 lime, juiced
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. Heat olive oil in a pot over medium-high heat.

  2. Add chopped onion and sauté for 5 minutes until translucent.

  3. Add minced garlic and diced serrano pepper, cook for another 5 minutes.

  4. Stir in cumin and smoked paprika.

  5. Add black beans and vegetable broth.

  6. Bring to boil and simmer for 15-20 minutes, until beans are tender.

  7. Remove from heat and blend the soup using a blender or immersion blender.

  8. Return soup to pot and stir in lime juice, salt and black pepper.

  9. Garnish with fresh cilantro and serve hot.
