How To Make Minestrone Bean Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 potato, peeled and diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can cannellini beans, drained and rinsed
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and garlic and cook until softened.

  3. Add carrot, celery, and potato and cook for 5 minutes.

  4. Pour in vegetable broth and bring to a boil.

  5. Stir in diced tomatoes, kidney beans, cannellini beans, dried basil, salt, and pepper.

  6. Reduce heat and simmer for 20 minutes.

  7. Serve hot.
