  • 2 chicken breasts, boneless and skinless
  • 6 cups of chicken broth
  • 2 tablespoons of soy sauce
  • 2 cloves of garlic, minced
  • 1 inch of ginger, grated
  • 1 teaspoon of sesame oil
  • 4 ounces of rice noodles
  • 1 cup of sliced mushrooms
  • 1 cup of sliced carrots
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring the chicken broth to a boil. Add the chicken breasts and cook until they are cooked through, about 15-20 minutes. Remove the chicken from the pot and shred it into small pieces using two forks.

  2. In the same pot, add the soy sauce, minced garlic, grated ginger, and sesame oil. Stir to combine.

  3. Bring the broth back to a boil and add the rice noodles, sliced mushrooms, and sliced carrots. Cook according to the package instructions or until the noodles are tender.

  4. Return the shredded chicken to the pot and stir to combine. Cook for an additional 2-3 minutes to heat the chicken through.

  5. Season with salt and pepper to taste. Serve the soup hot, garnished with chopped green onions.
