Ingredients

  • 4 6-ounce wild salmon fillets
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeno, seeded and diced
  • Juice of 1 lime
  • 2 tablespoons chopped cilantro
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat grill or grill pan to medium-high heat.

  2. Season salmon fillets with salt and pepper.

  3. In a mixing bowl, combine corn, bell pepper, red onion, jalapeno, lime juice, cilantro, salt, and pepper, stir well.

  4. Drizzle salmon fillets with olive oil and place them on the preheated grill or grill pan. Cook for 4-5 minutes per side or until cooked through.

  5. Remove salmon from heat and let it rest for a couple of minutes.

  6. Serve salmon topped with the corn and pepper salsa salad.

  7. Enjoy!
