Ingredients

  • 2.5 lbs pork loin
  • 1 tbsp olive oil
  • 1 tbsp fennel seeds
  • 2 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a small bowl, combine the fennel seeds, dried rosemary, salt, black pepper, and minced garlic.

  3. Rub the olive oil evenly over the pork loin, then sprinkle the spice mixture on all sides, pressing it into the meat.

  4. Place the seasoned pork loin in a roasting pan and roast in the preheated oven for 1 hour 30 minutes, or until the internal temperature reaches 145°F (63°C).

  5. Remove the pork loin from the oven and let it rest for 10 minutes before slicing.

  6. Serve the roast pork with your favorite side dishes and enjoy!
