How To Make Blackened Salmon with Mango Salsa

Blackened salmon fillets and fresh mango salsa is such an awesome pair with both flavors complementing each other in every bite.

Ingredients

For the mango salsa:

  • 1large ripe mango,peeled, seeded and coarsely chopped
  • 2tbspfresh cilantro,chopped
  • 1small clove garlic,minced
  • 2tbspfresh lime juice

For the salmon:

  • ½tbsppaprika
  • ½tspcayenne
  • 5sprigsfresh thyme,washed, leaves removed and chopped
  • 1tbspfreshly oregano leaves,chopped
  • 1tspkosher salt
  • 1lbwild salmon fillet,(4 pieces) skin-on
  • cooking spray

Instructions

To Make Mango Salsa:

  1. Combine all the salsa ingredients in a bowl.

  2. Season to taste with salt and pepper and refrigerate salsa until ready to serve.

To Make the Salmon:

  1. In a small bowl, add the paprika, cayenne, thyme and oregano and salt and mix to blend.

  2. Put the mixture on a plate or other flat surface and coat the salmon fillets.

  3. Heat a large heavy-bottomed pan or cast iron skillet over medium heat, and generously spray with oil.

  4. When very hot add the salmon, flesh side down and cook for 2 to 3 minutes.

  5. Use a spatula to carefully turn the salmon, then cook an additional 5 to 6 minutes. Serve topped with salsa.
