How To Make Spicy Prawn Cocktail with Tomato & Coriander Dressing

Ingredients
- 1 lb (450g) prawns, peeled and deveined
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 2 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh coriander (cilantro), chopped
- 1/4 cup mayonnaise
- 1 tbsp lemon juice
- Salt and pepper to taste
- Lettuce leaves, for serving
Instructions

In a bowl, mix together the chili powder, paprika, cayenne pepper, garlic powder, and salt. Add the prawns and toss until well coated.

Heat olive oil in a pan over medium heat. Add the prawns and cook for 2-3 minutes on each side, until cooked through.

In a separate bowl, combine cherry tomatoes, coriander, mayonnaise, lemon juice, salt, and pepper.

Serve the cooked prawns on a bed of lettuce leaves and drizzle with the tomato and coriander dressing.
