Ingredients

  • 1 lb (450g) prawns, peeled and deveined
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh coriander (cilantro), chopped
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Lettuce leaves, for serving

Instructions

  1. In a bowl, mix together the chili powder, paprika, cayenne pepper, garlic powder, and salt. Add the prawns and toss until well coated.

  2. Heat olive oil in a pan over medium heat. Add the prawns and cook for 2-3 minutes on each side, until cooked through.

  3. In a separate bowl, combine cherry tomatoes, coriander, mayonnaise, lemon juice, salt, and pepper.

  4. Serve the cooked prawns on a bed of lettuce leaves and drizzle with the tomato and coriander dressing.
