Ingredients

  • 8 slices of smoked salmon
  • 2 ripe avocados, peeled and pitted
  • 1 lemon, juiced
  • 1 tablespoon of chopped fresh dill
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mash the avocados with lemon juice, dill, salt, and pepper until smooth.

  2. Line 4 ramekins with plastic wrap, leaving enough overhang to cover the terrines.

  3. Lay 1 slice of smoked salmon in each ramekin, allowing it to hang over the edges.

  4. Spoon a layer of avocado mixture into each ramekin and smooth the top.

  5. Repeat the layers, ending with a slice of smoked salmon.

  6. Fold the overhanging plastic wrap over the top of each ramekin and press down firmly.

  7. Refrigerate for at least 1 hour to set.

  8. To serve, remove the plastic wrap, invert the ramekins onto serving plates, and gently remove the terrines.

  9. Garnish with additional dill, if desired, and serve chilled.
