  • 1 lb baby potatoes
  • 8 oz smoked salmon
  • 1 cup sour cream
  • 2 tbsp fresh dill, chopped
  • 1 lemon, sliced
  • Salt and pepper to taste

Instructions

  1. Boil the baby potatoes in salted water until tender, about 15 minutes. Drain and set aside.

  2. In a large skillet, heat some oil over medium-high heat. Add the boiled potatoes and cook until golden brown, about 5-7 minutes. Season with salt and pepper to taste.

  3. Meanwhile, slice the smoked salmon into thin strips.

  4. In a small bowl, mix together the sour cream and chopped dill. Season with salt and pepper.

  5. To serve, place the crispy potatoes on a plate. Top them with the smoked salmon strips and garnish with a dollop of the sour cream mixture. Finish with a squeeze of fresh lemon juice.
