How To Make Scandi Smoked Salmon Potatoes

Ingredients
- 1 lb baby potatoes
- 8 oz smoked salmon
- 1 cup sour cream
- 2 tbsp fresh dill, chopped
- 1 lemon, sliced
- Salt and pepper to taste

Boil the baby potatoes in salted water until tender, about 15 minutes. Drain and set aside.

In a large skillet, heat some oil over medium-high heat. Add the boiled potatoes and cook until golden brown, about 5-7 minutes. Season with salt and pepper to taste.

Meanwhile, slice the smoked salmon into thin strips.

In a small bowl, mix together the sour cream and chopped dill. Season with salt and pepper.

To serve, place the crispy potatoes on a plate. Top them with the smoked salmon strips and garnish with a dollop of the sour cream mixture. Finish with a squeeze of fresh lemon juice.
