How To Make Scandi Salmon Salad

Ingredients
- 4 salmon fillets
- 1 tbsp olive oil
- Salt and pepper, to taste
- 4 cups mixed greens
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup dill, chopped
- 1/4 cup lemon juice
- 2 tbsp extra virgin olive oil
- 1 tbsp Dijon mustard
- 1 tsp honey
Instructions

Preheat a grill or grill pan over medium heat. Brush the salmon fillets with olive oil and season with salt and pepper.

Grill the salmon for about 4-5 minutes per side, or until cooked through. Remove from heat and let cool slightly.

In a large bowl, combine the mixed greens, cucumber, red onion, cherry tomatoes, and dill.

In a small bowl, whisk together the lemon juice, extra virgin olive oil, Dijon mustard, and honey until well combined.

Pour the dressing over the salad and toss to coat.

Divide the salad onto plates and top with the grilled salmon fillets.
