How To Make Smacked Cucumbers

Ingredients
- 3 cucumbers
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp crushed red pepper flakes
- 2 cloves garlic, minced
- 1 green onion, chopped
- 1 tsp toasted sesame seeds
Instructions

Wash and dry the cucumbers. Cut them into 1-inch thick pieces.

Place the cucumber pieces on a cutting board and gently smash them with a rolling pin or the back of a knife.

Transfer the smacked cucumbers to a mixing bowl and sprinkle with salt and sugar. Let them sit for 5 minutes.

In a separate small bowl, mix together rice vinegar, sesame oil, crushed red pepper flakes, and minced garlic.

Pour the vinegar mixture over the cucumbers and toss well to combine.

Garnish with chopped green onions and toasted sesame seeds.
