Ingredients

  • 8 oz. pasta
  • 1 lb. prawns, peeled and deveined
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add prawns and cook until pink and opaque, about 3-4 minutes. Set aside.

  3. In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper.

  4. In a large bowl, combine cooked pasta, prawns, avocado, cherry tomatoes, red onion, and cilantro.

  5. Pour the dressing over the pasta mixture and toss gently to coat.

  6. Serve immediately or refrigerate until ready to serve.
