How To Make Giant Couscous & Aubergine Salad

Ingredients
- 1 cup giant couscous
- 1 large aubergine, sliced
- 1 red bell pepper, diced
- 1 small red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions

Cook the giant couscous according to package instructions. Drain and set aside.

Preheat a grill or grill pan over medium-high heat. Brush the aubergine slices with olive oil and season with salt and pepper.

Grill the aubergine slices for about 4-5 minutes per side, until softened and grill marks appear. Remove from heat and let cool.

In a large bowl, combine the cooked couscous, grilled aubergine, diced red bell pepper, chopped red onion, parsley, and mint.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour over the salad and toss to combine.

Serve the giant couscous & aubergine salad chilled or at room temperature.
