Ingredients

  • 4 catfish fillets
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup buttermilk
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a shallow dish, combine the cornmeal, flour, paprika, garlic powder, salt, and black pepper.

  3. Dip each catfish fillet into the buttermilk, then coat it evenly with the cornmeal mixture.

  4. Place the coated fillets onto the prepared baking sheet.

  5. Spray the top of the fillets lightly with cooking spray.

  6. Bake in the preheated oven for 18-20 minutes, or until the fish is golden brown and cooked through.

  7. Serve hot with tartar sauce or lemon wedges.
