Ingredients

  • 4 catfish fillets
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/4 to 1/2 tsp cayenne pepper
  • 1/2 cup buttermilk
  • Vegetable oil for frying

Instructions

  1. Rinse catfish and pat dry with paper towels.

  2. In a shallow dish, mix together flour, salt, paprika, garlic powder, onion powder, black pepper, and cayenne.

  3. Dip each fillet into buttermilk, then coat with seasoned flour mixture, pressing it onto the fish to ensure even coverage.

  4. Heat about 1 inch of oil in a heavy skillet over medium-high heat until hot but not smoking.

  5. Fry fillets two at a time, turning once, until golden brown and cooked through, about 4-5 minutes per side.

  6. Drain on paper towels and keep warm in a low oven until all fillets are cooked.

  7. Serve hot with lemon wedges, tartar sauce, and your favorite sides.
