Classic Southern-style fried catfish with a crispy, golden coating and tender, flaky fish inside.
Serves:
Ingredients
- 4 catfish fillets
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1/4 to 1/2 tsp cayenne pepper
- 1/2 cup buttermilk
- Vegetable oil for frying
Instructions
-
Rinse catfish and pat dry with paper towels.
-
In a shallow dish, mix together flour, salt, paprika, garlic powder, onion powder, black pepper, and cayenne.
-
Dip each fillet into buttermilk, then coat with seasoned flour mixture, pressing it onto the fish to ensure even coverage.
-
Heat about 1 inch of oil in a heavy skillet over medium-high heat until hot but not smoking.
-
Fry fillets two at a time, turning once, until golden brown and cooked through, about 4-5 minutes per side.
-
Drain on paper towels and keep warm in a low oven until all fillets are cooked.
-
Serve hot with lemon wedges, tartar sauce, and your favorite sides.
