Crispy golden catfish fillets and fluffy, cornmeal-based hushpuppies
Serves:
Ingredients
- 4 catfish fillets
- 1 cup of cornmeal
- 1/2 cup of all-purpose flour
- 1/4 cup of sugar
- 1 teaspoon of salt
- 1 teaspoon of baking powder
- 1/4 teaspoon of cayenne pepper
- 1/2 cup of milk
- 1/4 cup of water
- 1 egg
- Vegetable oil for frying
- Lemon wedges for serving
Instructions
-
Rinse catfish fillets and pat dry with paper towels.
-
In a large mixing bowl, combine cornmeal, flour, sugar, salt, baking powder, and cayenne pepper.
-
In another bowl, whisk together milk, water, and egg.
-
Pour the wet ingredients into the dry ingredients and mix until well combined to create a thick batter.
-
Heat about 2 inches of oil in a deep skillet or Dutch oven over medium-high heat.
-
Dip each catfish fillet into the batter until fully coated and carefully transfer into hot oil.
-
Fry for 5-7 minutes per side, or until golden brown and crispy.
-
Use a slotted spoon or tongs to transfer the catfish onto a paper towel-lined plate to drain excess oil.
-
To make hushpuppies, drop tablespoonfuls of the remaining batter into hot oil and fry until golden brown and puffy.
-
Serve catfish with hushpuppies and lemon wedges on the side.
