How To Make Catfish and Hushpuppies Recipe

Crispy golden catfish fillets and fluffy, cornmeal-based hushpuppies

Serves:

Ingredients

  • 4 catfish fillets
  • 1 cup of cornmeal
  • 1/2 cup of all-purpose flour
  • 1/4 cup of sugar
  • 1 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of cayenne pepper
  • 1/2 cup of milk
  • 1/4 cup of water
  • 1 egg
  • Vegetable oil for frying
  • Lemon wedges for serving

Instructions

  1. Rinse catfish fillets and pat dry with paper towels.

  2. In a large mixing bowl, combine cornmeal, flour, sugar, salt, baking powder, and cayenne pepper.

  3. In another bowl, whisk together milk, water, and egg.

  4. Pour the wet ingredients into the dry ingredients and mix until well combined to create a thick batter.

  5. Heat about 2 inches of oil in a deep skillet or Dutch oven over medium-high heat.

  6. Dip each catfish fillet into the batter until fully coated and carefully transfer into hot oil.

  7. Fry for 5-7 minutes per side, or until golden brown and crispy.

  8. Use a slotted spoon or tongs to transfer the catfish onto a paper towel-lined plate to drain excess oil.

  9. To make hushpuppies, drop tablespoonfuls of the remaining batter into hot oil and fry until golden brown and puffy.

  10. Serve catfish with hushpuppies and lemon wedges on the side.
