  • 4 tbsp butter
  • 1 large onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 large tomato, finely chopped
  • 1 cup boiled and mashed mixed vegetables (potatoes, cauliflower, carrots, peas)
  • 2 tbsp pav bhaji masala
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • Salt to taste
  • 4 pav buns
  • Chopped onion and coriander leaves for garnish


  1. Heat butter in a pan and add chopped onions. Saute until they turn translucent.

  2. Add green bell peppers and cook until they are tender.

  3. Add chopped tomatoes and cook until they become mushy.

  4. Add boiled and mashed mixed vegetables to the pan. Mix well.

  5. Add pav bhaji masala, red chili powder, turmeric powder, and salt. Mix everything together.

  6. Mash the mixture with a masher or the back of a spoon, ensuring all the vegetables are well combined.

  7. Cook for a few more minutes until all the flavors are well incorporated.

  8. In a separate pan, slice the pav buns horizontally and toast them with butter.

  9. Serve the hot pav bhaji with toasted pav buns, garnished with chopped onions and coriander leaves.
