How To Make Mussels with Sake, Coriander & Olive Oil

Ingredients
- 2 lbs fresh mussels
- 1 cup sake
- 1/4 cup olive oil
- 1/4 cup chopped fresh coriander
- 4 cloves garlic, minced
- 1 small onion, finely chopped
Instructions

Scrub the mussels under cold running water, removing any beards and debris. Discard any mussels that are already open or damaged.

In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent.

Pour in the sake and bring to a gentle simmer.

Add the mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened.

Remove the mussels from the pot using a slotted spoon and transfer them to a serving dish, discarding any that did not open.

Increase the heat to high and let the remaining liquid in the pot reduce for a few minutes.

Pour the reduced sauce over the mussels, and sprinkle with chopped fresh coriander.

Serve hot as an appetizer with crusty bread or over pasta.
