Ingredients

  • 2 lbs fresh mussels
  • 1 cup sake
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh coriander
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped

Instructions

  1. Scrub the mussels under cold running water, removing any beards and debris. Discard any mussels that are already open or damaged.

  2. In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until fragrant and translucent.

  3. Pour in the sake and bring to a gentle simmer.

  4. Add the mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened.

  5. Remove the mussels from the pot using a slotted spoon and transfer them to a serving dish, discarding any that did not open.

  6. Increase the heat to high and let the remaining liquid in the pot reduce for a few minutes.

  7. Pour the reduced sauce over the mussels, and sprinkle with chopped fresh coriander.

  8. Serve hot as an appetizer with crusty bread or over pasta.
