Ingredients

  • 8 oz chorizo, sliced
  • 2 cups cooked quinoa
  • 1 cup hummus
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add chorizo and cook until browned and crispy, about 5 minutes.

  2. In a bowl, combine cooked quinoa, hummus, cherry tomatoes, cucumber, red onion, cilantro, lemon juice, salt, and pepper. Mix well.

  3. Divide the quinoa mixture into 4 bowls. Top each bowl with the cooked chorizo.

  4. Serve the chorizo hummus bowls immediately and enjoy!
