Ingredients

  • 8 sardine fillets, canned or fresh
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons capers
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or a grill pan over medium heat.

  2. Season the sardine fillets with salt and pepper.

  3. Grill the sardine fillets for 2-3 minutes per side until cooked through and slightly charred. Remove from heat and set aside.

  4. In a large salad bowl, combine the mixed salad greens, cherry tomatoes, kalamata olives, red onion, and capers.

  5. In a small bowl, whisk together the lemon juice and olive oil. Season with salt and pepper.

  6. Drizzle the dressing over the salad and toss to combine.

  7. Divide the salad onto plates and top each with 2 grilled sardine fillets.

  8. Serve immediately.
