Ingredients

  • 2 cans of sardines in oil, drained
  • 1/4 cup mayonnaise
  • 2 tsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 8 slices of bread
  • 4 leaves of lettuce
  • 1 tomato, sliced
  • 1/2 red onion, thinly sliced

Instructions

  1. In a bowl, mix together the drained sardines, mayonnaise, Dijon mustard, lemon juice, salt, and pepper.

  2. Toast the bread slices.

  3. Spread the sardine mixture on 4 of the slices.

  4. Top each slice with a lettuce leaf, tomato slices, and red onion slices.

  5. Top with the remaining toast slices.

  6. Cut the sandwiches in half and serve.
