Ingredients

  • 8 oz pasta
  • 2 cans sardines in oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 clove garlic, minced

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat olive oil over medium heat. Add onion and minced garlic, sauté until softened.

  3. Add the canned tomatoes, tomato paste, dried oregano, red pepper flakes, salt, and pepper. Cook for 5 minutes.

  4. Meanwhile, drain the sardines from the oil and break them into smaller pieces.

  5. Add the sardines to the skillet and cook for an additional 5 minutes.

  6. In a small bowl, mix together the lemon zest, chopped parsley, and minced garlic to make the gremolata.

  7. Serve the tomato sauce and sardine mixture over the cooked pasta. Sprinkle with the gremolata.
