How To Make One-Pan Jerk Roast Chicken

Ingredients

  • 1 whole chicken (about 4 pounds)
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • Salt and pepper, to taste
  • 1 lemon, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Rinse the chicken and pat it dry with paper towels.

  3. In a small bowl, mix together the jerk seasoning, olive oil, soy sauce, brown sugar, thyme, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.

  4. Rub the seasoning mixture all over the chicken, making sure to get it into the nooks and crannies.

  5. Place the seasoned chicken in a roasting pan or a large oven-safe skillet.

  6. Arrange the lemon slices on top of the chicken.

  7. Roast the chicken in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C).

  8. Remove the chicken from the oven and let it rest for about 10 minutes before carving.

  9. Garnish with fresh cilantro and serve.
