Ingredients

  • 500g prawns, peeled and deveined
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 400ml coconut milk
  • 2 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add onions, garlic, and ginger. Sauté until onions are translucent.

  2. Add turmeric, cumin, coriander, and red chili powder to the pan. Stir well to coat the onions with the spices.

  3. Add prawns to the pan and cook for 2-3 minutes, until they start to turn pink.

  4. Pour in the coconut milk and season with salt. Bring the curry to a simmer and cook for 10-15 minutes, allowing the flavors to meld together.

  5. Serve the prawn and coconut curry over cooked rice or with naan bread. Garnish with fresh cilantro.
