Ingredients

  • 2 lbs of fresh clams
  • 2 tbsp of olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 3 potatoes, diced
  • 2 cups of fish or chicken broth
  • 1 bay leaf
  • 1/4 cup of heavy cream
  • Salt and pepper to taste

Instructions

  1. Scrub and rinse clams, discarding any that are damaged or open.

  2. Heat olive oil in a large pot over medium heat, add onion and garlic, and cook until soft.

  3. Add potatoes, broth, and bay leaf. Simmer until potatoes are tender.

  4. Add clams to the pot, cover and simmer until clams open, stirring occasionally.

  5. Remove bay leaf and stir in cream. Season with salt and pepper.
