  • 4 sole fillets
  • 1 cup peas
  • 1 cup mussels
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large oven-safe skillet, melt the butter over medium heat until it turns golden brown.

  3. Add the minced garlic and cook for 1-2 minutes until fragrant.

  4. Season the sole fillets with salt and pepper, then place them in the skillet, skin side down.

  5. Cook the fillets for 2-3 minutes until golden brown, then flip them over.

  6. Add the peas and mussels to the skillet, arranging them around the fillets.

  7. Squeeze the lemon juice over the fish, peas, and mussels.

  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the fish is cooked through and the mussels have opened.

  9. Remove from the oven and garnish with fresh parsley before serving.

  10. Serve the brown butter sole with peas and mussels hot.
