How To Make Sole Meunière

Ingredients

  • 4 sole fillets
  • 1/2 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp unsalted butter
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a shallow dish, mix the flour, salt, and black pepper together.

  2. Dredge each sole fillet in the flour mixture, shaking off any excess.

  3. In a large skillet, melt 2 tablespoons of butter over medium-high heat.

  4. Place two sole fillets in the skillet and cook for 2-3 minutes on each side, until golden brown. Repeat with the remaining fillets.

  5. Remove the cooked fillets from the skillet and keep them warm.

  6. Add the remaining 2 tablespoons of butter to the skillet. Cook until the butter foams and turns a light golden brown color.

  7. Remove the skillet from heat and stir in the lemon juice. The butter sauce will sizzle and bubble.

  8. Pour the butter sauce over the cooked sole fillets. Sprinkle with fresh parsley.

  9. Serve immediately and enjoy!
