How To Make Chef John’s Smothered Pork Chops

Ingredients
- 4 bone-in pork chops
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 large onion, thinly sliced
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp flour
- 2 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 cup heavy cream
Instructions

Season pork chops with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high heat. Add pork chops and cook until browned, about 3-4 minutes per side. Remove from skillet and set aside.

In the same skillet, add sliced onions and mushrooms. Cook until softened, about 5 minutes.

Add minced garlic and cook for another minute.

Sprinkle flour over the vegetables and stir to combine.

Gradually pour in chicken broth, stirring constantly until the sauce thickens.

Stir in dried thyme and rosemary.

Return the pork chops to the skillet, cover, and simmer for 20 minutes, or until the pork chops are cooked through.

Remove the pork chops from the skillet again and stir in heavy cream. Cook for another 5 minutes, stirring occasionally.

Serve the smothered pork chops with the onion and mushroom gravy on top.
