Cooking: 25 minutes
Total: 40 minutes

Serves:

Ingredients

  • 1 sheet of puff pastry, thawed
  • 1 large onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 100g goat’s cheese, crumbled
  • Fresh thyme leaves, for garnish
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. In a frying pan, heat the olive oil over medium heat. Add the thinly sliced onion and cook until caramelized, about 10 minutes. Stir in the balsamic vinegar and cook for another 2 minutes. Season with salt and pepper.

  3. Roll out the puff pastry sheet and cut it into 4 equal squares.

  4. Spoon the caramelized onions onto each square, leaving a border around the edges. Top with crumbled goat’s cheese.

  5. Fold the edges of the pastry over the filling, creating a rustic shape.

  6. Place the pastries on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown and puffed up.

  7. Remove from the oven and let cool for a few minutes. Garnish with fresh thyme leaves before serving.
