- 8 slices of rye bread
- 1 pack of halloumi cheese, sliced
- 2 ripe avocados, sliced
- 4 cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- Fresh basil leaves, for garnish
- Olive oil, for grilling
- Salt and pepper, to taste
Instructions

Preheat a grill pan or a panini press.

Brush one side of each rye bread slice with olive oil.

Place the halloumi slices on the grill pan and cook for 2-3 minutes on each side, until golden brown and crispy.

Remove the halloumi from the pan and set aside.

Place the bread slices on the grill pan, oiled side down, and grill for 1-2 minutes, until toasted.

Remove the bread slices from the pan and arrange them on a serving platter.

Top each slice of bread with avocado slices, grilled halloumi, cherry tomato halves, and red onion slices.
