Ingredients

  • 8 slices of rye bread
  • 1/2 cup thousand island dressing
  • 1/2 pound corned beef, thinly sliced
  • 1/2 cup sauerkraut, drained and rinsed
  • 4 slices Swiss cheese
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F.

  2. Cut each slice of rye bread into 4 smaller squares.

  3. Brush one side of each bread square with melted butter.

  4. Place the bread squares, buttered side down, on a baking sheet.

  5. Spread a teaspoon of thousand island dressing onto each bread square.

  6. Top each bread square with a small piece of corned beef.

  7. Spoon about a teaspoon of sauerkraut on top of the corned beef.

  8. Top each square with a small piece of Swiss cheese.

  9. Bake in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.

  10. Serve hot and enjoy!
