  • 4 baps
  • 6 eggs
  • 2 tomatoes, sliced
  • Salt and pepper to taste
  • Butter for cooking
  • Fresh parsley for garnish

Instructions

  1. Slice the baps in half and toast them lightly.

  2. In a bowl, beat the eggs and season with salt and pepper.

  3. Heat a knob of butter in a non-stick pan over medium heat.
