Serves:
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs, beaten
- 4 sub rolls
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
-
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
-
In a shallow dish, mix together breadcrumbs, Parmesan cheese, garlic powder, dried oregano, dried basil, salt, and black pepper.
-
Dip each chicken breast into the beaten eggs, allowing any excess to drip off. Then coat the chicken in the breadcrumb mixture, pressing firmly to adhere.
-
Place the breaded chicken breasts on the prepared baking sheet. Bake for 20-25 minutes or until the chicken is cooked through and crispy.
-
While the chicken is cooking, slice the sub rolls in half lengthwise. Place them on a separate baking sheet and lightly toast them in the oven.
-
Once the chicken is cooked, remove it from the oven and spoon marinara sauce over each chicken breast. Top with shredded mozzarella cheese.
-
Return the chicken to the oven and broil for an additional 2-3 minutes, or until the cheese is melted and bubbly.
-
Remove the chicken from the oven. Place each chicken breast on a toasted sub roll. Garnish with fresh basil leaves.
-
Serve the Chicken Parm Subs hot.
