Preparation: 15 minutes
Cooking: 25 minutes
Total: 40 minutes

Serves:

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs, beaten
  • 4 sub rolls
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a shallow dish, mix together breadcrumbs, Parmesan cheese, garlic powder, dried oregano, dried basil, salt, and black pepper.

  3. Dip each chicken breast into the beaten eggs, allowing any excess to drip off. Then coat the chicken in the breadcrumb mixture, pressing firmly to adhere.

  4. Place the breaded chicken breasts on the prepared baking sheet. Bake for 20-25 minutes or until the chicken is cooked through and crispy.

  5. While the chicken is cooking, slice the sub rolls in half lengthwise. Place them on a separate baking sheet and lightly toast them in the oven.

  6. Once the chicken is cooked, remove it from the oven and spoon marinara sauce over each chicken breast. Top with shredded mozzarella cheese.

  7. Return the chicken to the oven and broil for an additional 2-3 minutes, or until the cheese is melted and bubbly.

  8. Remove the chicken from the oven. Place each chicken breast on a toasted sub roll. Garnish with fresh basil leaves.

  9. Serve the Chicken Parm Subs hot.
