Ingredients

  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 4 sub rolls, for serving

Instructions

  1. In a large bowl, whisk together olive oil, red wine vinegar, garlic, Italian seasoning, dried oregano, dried basil, red pepper flakes, salt, and pepper.

  2. Add the chicken cubes to the marinade and toss to coat. Allow the chicken to marinate for at least 30 minutes, or up to 24 hours for maximum flavor.

  3. Preheat grill to medium-high heat. Thread the marinated chicken onto skewers, leaving a small space between each piece.

  4. Place the chicken skewers on the grill and cook for about 6 minutes per side, or until the chicken is cooked through and has grill marks.

  5. Remove the chicken from the grill and let it rest for a few minutes. Serve the grilled chicken spiedies on toasted sub rolls with your favorite condiments or toppings.
