Preparation: 15 minutes
Cooking: 10 minutes
Total: 25 minutes

Serves:

Ingredients

  • 1 pound boneless chicken or pork, cut into bite-sized cubes
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • 4 sub rolls, for serving

Instructions

  1. In a bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, dried basil, dried parsley, red pepper flakes, salt, and pepper.

  2. Place the chicken or pork cubes in a ziplock bag and pour the marinade over them. Seal the bag and refrigerate for at least 2 hours, or overnight for best results.

  3. Preheat the grill to medium-high heat.

  4. Thread the marinated meat onto skewers.

  5. Grill the skewers for about 4-5 minutes per side, or until the meat is cooked through and slightly charred.

  6. Remove the skewers from the grill and let them rest for a few minutes.

  7. Meanwhile, toast the sub rolls on the grill.

  8. Remove the meat from the skewers and divide it evenly among the toasted sub rolls.

  9. Serve the Spiedies hot and enjoy!
