Ingredients
- 4 cups of bok choy, chopped
- 1 cup of shredded carrots
- 1 cup of sliced cucumbers
- 1/2 cup of sliced red bell pepper
- 1/4 cup of chopped green onions
- 1/4 cup of chopped cilantro
- 1/4 cup of chopped peanuts
- For the dressing:
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of sesame oil
- 1 tablespoon of honey
- 1 teaspoon of grated ginger
- 1 clove of garlic, minced
Instructions

In a large bowl, combine the bok choy, carrots, cucumbers, red bell pepper, green onions, cilantro, and peanuts.

In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.
