How To Make Warm Dijon Potato Salad

Ingredients
- 1.5 lbs (680g) potatoes, cubed
- 3 tbsp extra virgin olive oil
- 2 tbsp dijon mustard
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp salt
- 1/2 tsp black pepper
- 2 green onions, thinly sliced
- 2 tbsp fresh parsley, chopped
Instructions

Place the cubed potatoes in a pot filled with water and bring to a boil. Cook for about 10-12 minutes, or until the potatoes are fork-tender.

While the potatoes are cooking, in a small bowl, whisk together the olive oil, dijon mustard, apple cider vinegar, honey, salt, and black pepper.

Drain the cooked potatoes and transfer them to a large bowl. Pour the dressing over the potatoes and gently toss until all the potatoes are coated.

Add the sliced green onions and chopped parsley to the bowl and give it another gentle toss to evenly distribute the ingredients.
