How To Make Vinagrete (Brazilian Tomato Slaw)

Ingredients
- 4 large tomatoes, diced
- 1 small onion, finely chopped
- 1 small green bell pepper, diced
- 1 small red bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

In a large bowl, combine the diced tomatoes, chopped onion, diced green and red bell peppers, and chopped parsley.

In a separate small bowl, whisk together the red wine vinegar, olive oil, salt, and black pepper.

Pour the vinaigrette dressing over the tomato mixture and toss until well coated.

Let the Vinagrete marinate in the refrigerator for at least 1 hour before serving to allow the flavors to meld together.

Serve chilled as a side dish or as a topping for grilled meats, fish, or sandwiches.
