Ingredients

  • 4 wholemeal wraps
  • 2 cups of cooked peas
  • 1/4 cup of fresh mint leaves
  • 2 tablespoons of tahini
  • 2 tablespoons of lemon juice
  • 2 garlic cloves, minced
  • 1/4 teaspoon of cumin
  • Salt and pepper to taste
  • 4 roasted beetroots, thinly sliced
  • 1 cup of baby spinach leaves

Instructions

  1. In a food processor, blend the cooked peas, fresh mint leaves, tahini, lemon juice, minced garlic, cumin, salt, and pepper until smooth.

  2. Warm the wholemeal wraps according to package instructions.

  3. Spread a generous amount of the minty pea hummus onto each wrap.

  4. Top with sliced roasted beetroots and baby spinach leaves.

  5. Roll up the wraps tightly and slice in half.

  6. Serve and enjoy!
