This avocado tuna salad makes for a delectable lunch meal! It’s a filling dish of tomatoes, tasty tuna, and flavorful spices served over pita or sandwiches.

Ingredients

  • 5oztuna in water,(2 cans), drained well
  • ½cuptomatoes,2 small, seeded, diced
  • ½cupyellow bell pepper,diced, ½ medium
  • cupred onion,chopped, rinsed
  • ¼cupfresh parsley,chopped
  • 1medium avocado,not too soft, diced
  • 3tbspolive oil
  • 2tbsplemon juice,fresh
  • salt and freshly ground black pepper

For Serving:

  • whole wheat sandwich thins
  • pita pockets
  • whole grain bread,or romaine lettuce leaves

Instructions

  1. To a medium mixing bowl, add the drained tuna, tomatoes, bell pepper, onion, parsley, avocado, olive oil, lemon juice, then season with salt and pepper to taste. 

  2. Toss the mixture to combine.

  3. Serve in sandwich thins or pita pockets, on toasted bread, or as lettuce wraps, and enjoy!
