- 5oztuna in water,(2 cans), drained well
- ½cuptomatoes,2 small, seeded, diced
- ½cupyellow bell pepper,diced, ½ medium
- ā cupred onion,chopped, rinsed
- ¼cupfresh parsley,chopped
- 1medium avocado,not too soft, diced
- 3tbspolive oil
- 2tbsplemon juice,fresh
- salt and freshly ground black pepper
For Serving:
- whole wheat sandwich thins
- pita pockets
- whole grain bread,or romaine lettuce leaves

To a medium mixing bowl, add the drained tuna, tomatoes, bell pepper, onion, parsley, avocado, olive oil, lemon juice, then season with salt and pepper to taste.Ā
